Good morning! This is my last monday here in Atlanta. This week will be a week of a lot of lasts. All this means, however, is that the days left till I go to France are dwindling down. No problems there. Since I’m returning my borrowed fridge in two days I can’t go to the store for anything new..welcome to the life of peanut butter and oats. I am suprised at how creative you can get with these two ingredients. It is a world of possibility.

Wrapped into a lovable cookie shape
Halloween had nothing to do with this breakfast theme. Honest. Why this looks incredibly like a bat is beyond me. Stuck with using up the barren remnants of my food supply, this turned out rather well. Topped with creamy banana cacao soft serve and raspberry jam [this stuff can make anything a magical experience] This was a breakfast of champions.
Breakfast Cookie Sundae ~ 1/2 cup raw muesli 1 tbsp of chia seeds splash of vanilla extraxt dash of salt lots of cinnamon [just use your preference] 1 tbsp of almond butter splash of unsweetened vanilla almond milk Mix everything together in a small bowl. Press it into a cookie shape and wrap in plastic wrap. I like to stick mine in the freezer the night before though the fridge would be fine. Soft Serve ~ 1 frozen banana 1 tbsp cacao nibs Blend till it resembles speckled ice cream bliss. Top it all off with a spoonful of jam and a sprinkle of shredded coconut.

I use about 4 ounces and it keeps me full all morning! You can use less though and just play around with it.
