Rosemary and Garlic Roasted Vegetables

When at a loss..

of what on earth to make for dinner, an easy solution is to empty the contents of your fridge, chop it up, toss with a bit of oil, roast, eat. Easy enough.

This fridge raid yielded some chopped up celery, zucchini, carrots, onion, a few cherry tomatoes, whole garlic cloves, fresh rosemary, and kalamta olives. Drizzled with olive oil, a little of the juice from my olives, garlic powder, dried thyme and a bit of sea salt and pepper. Tossed and left in the oven till you deem perfection has been reached.

By the way….Happy almost weekend. I love the feeling of having an entire saturday and sunday ahead of you. Hope you do something exciting and maybe consume a few roasted veggies along the way ~
