Banana Berry Pudding Cakes with a Hint of Lime

This past weekend a sweet breakfast was in high demand. The city has been under a canopy of rainy skies with a slight chill..not exactly the kind of May I’m used to. I’m ready for the heat, the sundresses, and the flip flops. Preferably soon, Please.

This recipe came about by accident, too much liquid, not enough flour. An accident, however, that turned into a tasty treat. With a crispy muffin-like outside and a creamy interior these are full of flavor and texture. Hints of raspberry and lime paired with strawberries and banana pull it all together.

Banana Berry Pudding Cakes with a Hint of Lime

1/2 cup almond meal (+2 tsp or so)

1/2 cup millet flour

1 cup roughly berries (strawberries and raspberries)

1 small banana

1/2 tsp baking soda

1 tsp baking powder

1/8 tsp lime zest

juice of half a small lime (roughly 1 1/2 tsp)

2 tbsp honey

4 ounces unsweetened applesauce

1 tbsp + 1/2 tsp coconut oil (liquid)

1 egg

1/2 tsp pure vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

dash of salt

Preheat your oven to 350 degrees. Mix the dry ingredients in a large bowl, set aside. I used frozen berries which, once thawed, added more liquid then if fresh fruit was used. Once berries are thawed mix all the wet ingredients together in a food processor until smooth (including the egg). Transfer the wet ingredients to the dry and mix well, add a few more tsp of almond meal to help thicken the batter, if you like (I did). Pour into a greased or lined muffin tin and bake for around 30 mins or until the outside of the muffins are slightly golden and crisp. The insides will remain very soft until cooled. Feel free to eat with a spoon and keep leftovers in the fridge.

Breakfast Cookie Sundae

Good morning!  This is my last monday here in Atlanta.  This week will be a week of a lot of lasts.  All this means, however, is that the days left till I go to France are dwindling down.  No problems there.  Since I’m returning my borrowed fridge in two days I can’t go to the store for anything new..welcome to the life of peanut butter and oats.  I am suprised at how creative you can get with these two ingredients.  It is a world of possibility.

Wrapped into a lovable cookie shape

Halloween had nothing to do with this breakfast theme.  Honest.  Why this looks incredibly like a bat is beyond me.  Stuck with using up the barren remnants of my food supply, this turned out rather well.  Topped with creamy banana cacao soft serve and raspberry jam [this stuff can make anything a magical experience] This was a breakfast of champions.

Breakfast Cookie Sundae ~
1/2 cup raw muesli
1 tbsp of chia seeds
splash of vanilla extraxt
dash of salt
lots of cinnamon [just use your preference]
1 tbsp of almond butter
splash of unsweetened vanilla almond milk
Mix everything together in a small bowl.  Press it into a cookie shape and wrap in plastic wrap.  I like to stick mine in the freezer the night before though the fridge would be fine.
Soft Serve ~
1 frozen banana
1 tbsp cacao nibs
Blend till it resembles speckled ice cream bliss.
Top it all off with a spoonful of jam and a sprinkle of shredded coconut.

Banana Sandwich [wrap]

Banana.  Sandwich.  I mean wrap.

I don’t know why I haven’t tried one of these before..but have no fear, I am now on the flat banana bandwagon.  While perusing the grocery store isles the other day [I proudly admit that this is a favorite pastime of mine.  No shame]  I was glancing at dried fruit:  raisins, cranberries, apricots….and saw these. They are almost like banana tortillas.  Filled with creamy peanut butter and broken up pieces of salty dark chocolate.  A little dance was being done for this to say the least.

So this is my last weekend in Atlanta.  A friend of mine arrives wednesday evening.  I pack up.  And am then off for a quick hiking escapade in North Carolina before finally going home.  Needless to say there is a lot to be done and not much time for it to be done in.  The fact that I’m doing all this and leaving myself about a week to prepare for my 3 month stay in southern France should be a true adventure.

Number one on my to-do list is finishing a painting commission – from the moment I awoke I painted.  Painted.  Painted.  I didn’t leave my tiny room till 6 o’clock.  To not see sunlight or breathe fresh air till this time of day is criminal.  Ahhh.  Only a few more days…..

CrAzY weekend

This weekend was full of dancing.  Swing dancing.  I think I clocked in around 15 hours, all night dancing.  woooooooo for no sleep 😉

Since sleeping or dancing was taking priority over eating [not smart, I know]  this weekend was a slew of random eats.

and in other news one of my dog pics was on cuteoverload.com! 😀

So here are some random eats from this busy weekend:

gRAWnola bar.

Brussel sprouts in a lemon vinaigrette with chopped apricot.  yum.

ICE CREAM mini break at work.  I was dragging around 4 o’clock and with two more hours to go something needed to happen.  This cold cup of ice creamy goodness was the epitome of perfect.

It was actually an expresso chocolate chip handmade gelato.  Talk about awesome-ness in your mouth.

Dinner one night was a green monster bowl.  Topped with TJ graham crackers … and puffed brown rice 😉

Another meal was a dorm room success!

Olive Tapenade Tuna Salad

In a bowl was mixed:

1/2 a can of tuna
1 tbsp of tomato paste
large heaping spoonful of Trader Joe’s green olive tapenade
splash of tabasco
dash of cumin
some sprays of garlic grape-seed oil
Topped with ripped up spinach and sesame rice crackers.

Some fruit that was on it’s last leg was also given a whirl.

A beautiful apricot, very juicy, and still good to eat 🙂

Copious amounts of banana soft serve

1 frozen banana
4 ounces of pomegranate kefir
1 tbsp of chia seeds
spoonful of cacao nibs
topped with granola and brown rice puffs.

Hopefully everyone had a great weekend!  I can’t wait to dive into the three additional dance nights I’ll have this week, talk about non-stop.

Pom-Spin Smoothie/Sushi/Cutest Pup Ever/Makin’ Dinner!

Return of the pomegranate – spinach smoothie.  It has been too long.

I took pics step by step as I made it 😉

– First 1 tbsp chia seeds –

– Then lots of cinnamon (you can’t ever have too much)

– 2 large handfuls of fresh spinach –

– Frozen B-nana –

– spoonful of peanut butter 🙂 –

– 4-6 ounces of pomegranate kefir (the more you use the more liquid consistency you will get) –

– THEN blenddddd –  [top with more cinnamon]

– And a sprinkle of cacao bits –

My morning was filled with puppy love. [<3]

Lunch was a quick trip to trader joe’s

Organic carrot juice.  amazing.

And brown rice california rolls

brown rice and seaweed with avocado, crab, and carrot.

Then rolled in toasted sesame seed good-ness.

For dinner tonight I was invited to cook at a friends house.  I was so pumped, being cooped up with only a dorm fridge and blender can make you go a little crazy after a while.

I decided to adapt a recipe from Smitten Kitchen.  Sausage filled potatoes, with sides of lightly sautéed zucchini and tossed arugula salad.  It Turned out divine!

First we mixed up a sauce for the potato filling and later for the salad dressing.

A bit of mayo, tomato paste, anchovey paste [I had to search for this, sounds gross, but makes the dish.  Like fish sauce is to Thai food]  And trader joe’s dijon mustard which was heavenly.  I have a new love in the condiment category.

MIX

Onion – Chopped

To save on time, the potatoes went into the microwave first then were halved and scooped out.

amounts of cider and trader joe’s olive tapenade were consumed in the process 😉

Onion then went on the stove with olive oil and a sprinkle of salt

Zucchini was washed and then chopped.  In a food processor with a chopping attachment.  I have never used one of these before and felt like a little kid at a candy store, for the very first time.  Out of this world.  If I owned one of these I would be chopping everything and anything all day long for no apparent reason, maybe it’s a good thing I’m not in possession of one yet 😉

Zucchini chopped – and into the pan on light heat with olive oil and sprinkles of salt and pepper.  With a bit of parmesan cheese at the end.

water, more dijon, and lemon juice was added to some of the previous made sauce and tossed with fresh arugula

The potatoes were filled, baked, topped with more dijon mixture, broiled, then set on a plate.

Dessert was a homemade blueberry crumble, made by the host, with fresh blueberries from their back yard.  I don’t think there is anything better.

Topped with vanilla ice cream [the authentic kind….with the black dots] 🙂

gRAWnola

This morning was a gRAWnola bar for breakfast.  I actually tried these back home where my boss would eat these bars for breakfast every morning.

Look at this ingredient list!  And they taste wonderful/keep you going all day long.

Give them a try 😉

Along with my bar was a small cup of peanut butter & jelly soft serve.

Bliss.

Peanut Butter & Jelly Soft Serve
1 frozen banana
spoonful of peanut butter
spoonful of jelly [you better bet I used raspberry]
dash of cinnamon
and a splash of liquid [water, milk, yogurt, up to you]
BLEND.  ENJOY.

I had mine with copious amounts of puffed brown rice.

Puffed cereal + raspberry jam = 😀

Lunch was chipotle with the office.

Cilantro rice with grilled peppers and onions, cheese, lettuce, guacamole, and ALL 4 salsas.  Party in my mouth without a doubt.

Chipotles corn salsa has to be my favorite.

Dinner was a cheese ravioli from whole foods.

It was good, but I am ready to start making my own food.  I can’t believe I only have 2 more weeks living here though!

Tasted like spaghetti o’s.  Blast to the past.  I think I have out grown this combo unfortunately/fortunately.  Bring on the spinach, herb, and artichoke pasta please.

Before Wednesday dancing began I threw together some mini peanut butter and raspberry jelly sandwiches.

Beautiful things.  My obsession with this jelly might be getting out of control.

Anyone else have a liking for foods in a tiny form?

I have never tried for more then one meal or two.  It is definitely a challenge that takes a lot of will power.

Puff. Rice. Crunch.

So I have a new obsession.  wait for it.  Puffed Brown Rice. 🙂  It’s so airy and care free that I find myself wanting to include it with everything!  Not to mention the crunch, and who doesn’t like a good crunch now and again?

Today’s Breakfast was another Pomegranate Spinach Smoothie..with a side cup of puffed rice 😀

Pomegranate Spinach Smoothie
Ingredients:
1 tbsp of ground flax
lots of cinnamon
1 frozen banana
two large handfuls of fresh spinach
4-6 ounces pomegranate kefir
spoonful of peanut butter
and blenddd.
Topped with some cacao nibs and copious amounts of puffed brown rice.  Delish.

Lunch today was another trip to metro fresh, where I had a divine sugar plum salad.  TONS of fresh chopped plums with walnuts, celery, and basil in an orange maple vinaigrette.  omg.  This deserves the honored title of party in your mouth.  A glorious fruit salad!

This was followed by a chicken and farfalle pasta salad in a basil pesto with corn and peas.  This was good but very skimpy on the pasta with way too much chicken.  Ah well.  The basil infused meal was pretty good and I even had some left for dinner 😉

Before Monday night dancing [it’s called Hot Jam on Monday nights(!)]  Their was an array of snack-mania.

Peanut Butter and the new addition to my fridge, the godly raspberry jam, on a cinnamon TJ graham cracker.  This Jelly is like a drug, no joke.

Then I decided to use the last of my pomegranate kefir [tear] on a bowl of surreal awesome-ness.

Base: A broken TJ cinnamon graham cracker, then piles of puffed brown rice, a tbsp of peanut butter, a sprinkle of chia seeds, a dash of cacao nibs (can you dash cacao nibs?) and the biggest spoonful of raspberry jam.  This resulted in the biggest food induced smile ever.  Beautiful.

Then their was some Trader Joe’s Roasted rosemary pecans and cranberries.  I bought this after seeing a sale ad for it online and it is quite good to say the least.

There are actually sprigs of rosemary all throughout this trail mix which makes it quite intoxicating.  It reminds me of the fish my mom would always marinate with rosemary from her garden growing up.  <3.

This would be even more fabulous if made in my own kitchen, can you imagine the smell of roasting nuts and rosemary wafting out of your oven as the cooler days are looming ever closer?

Alas when I am reunited with a kitchen this can be a reality.

Before running of to dance I grabbed one of these sample bags I snagged at whole foods this past weekend.

Great, as always.  I wasn’t expecting them to be as spicy as they were, but a lovely kick 😉

Pomegranate~Oat B-fast. a.k.a. Dessert.

This mornings Breakfast was so heavenly it shouldn’t be allowed … or should more often maybe 🙂

Pomegranate~Oats

You better bet I had a frozen banana ready and waiting for this mornings breakfast.  I even put my normal ‘lazi-ness’ aside and removed the soft serve from the blending cup and into a stylish mug.  A result of Saturday I dare say.  This was an amazing combo, the graham crackers were from Trader Joe’s and are a bit thicker then normal ones, which is for the better 🙂

Pomegranate~Oats
4-8 ounces pomegranate kefir [up to you on consistency]
1 frozen banana
splash of vanilla extract
lots of cinnamon
1/3-1/2 cup raw rolled oats
1 tbsp peanut butter
1 tbsp chia seeds
2 cinnamon graham crackers [broken into pieces]
Blend banana with cinnamon and splash of vanilla extract, empty into dish.  Top with kefir, oats, graham cracker pieces, and chia seeds.  Then garnish with a bit of shredded coconut, cacao nibs, and more cinnamon, it is up to you 😉
Mix ~ Enjoy

After running some errands I decided to stop by whole foods.  Again.  I blame this on not having access to one till last month so I’m trying to make up for lost time.  ALSO there are samples galore on the weekends, a college girl on a budgets dream.  Everything from wild caught breaded fish with organic ketchup and raw granola to locally made yogurt and a frozen chili chocolate cheesecake that should be illegal.

After perusing for an hour or so the salad bar lured me to its never ending variety and I ended up coming home with dinner B-)

Roasted Sweet Potato things = God these were good.  Has anyone ever had sweet potatoes that they haven’t liked?

I swear this salad bowl was not the size of China, I have a bad time resisting putting one of everything in there though – crazy combinations result.

Tonight I wanted to try some new booty from my recent grocery trip.

Apple.  Sliced thin and wonderful.

Justin’s chocolate hazelnut butter.  I bought some individual packets of this brand because if truth be told…I have way to many open nut butters right now but have never tried Justin’s before.  If only there were sample sized packets like these of everything!  A solo eaters dream…..

Next up was a new Jam.  Having just used up the jar of apricot I purchased Raspberry today.  Probably one of my favorite flavors.  A spoonful on top of 4 oz of brown rice crisp [another of today’s purchases I can’t wait to have fun with] and a splash of pomegranate kefir.  I love to use splash as a measurement… anyways this hit the spot.  I swoon for raspberries of all forms. 🙂

Back on the Trail Again

Last night I was in bed around 12!  First time in weeks, so exciting.  8hours sleep was needed to say the least.  I awoke this morning set on my banana spinach pomegranate green monster.  While constructing I discovered I forgot to put a banana in the freezer last night 😮 I ended up using a regular banana and the result was not the same.  It was good, but their is something about the ice cold creaminess of a frozen banana that transforms the drink.  I don’t recommend making this drink without a frozen B-nana.

Growing up my Mom and I loved going to eat at Schlotzski’s Deli.  Their bread is beyond addicting.  Too me it is so different then anywhere else and I am in love.  The only one in my hometown closed down around 8 years ago and I haven’t been to one since.  How I made it this long is still a mystery to me.  When ze boss at work brought up making a field trip to one near by [in atl] I jumped on it.

These photos take the cheezi-ness level to an extreme, but I assure you this pizza is a lot smaller then it looks 😉 and a party in your mouth if ever their was one. 🙂

I was released from work early today, and decided to finally get back outside for a real [non gym] run.  I am a swimmer at heart, and that is my usual choice of exercise.  Me and land sports do not mix – bad things almost always follow.  Running is probably the only thing I can do, and even then I bet someone watching me would say my form is somewhere in China. 😮

The last few months this past spring before moving up to Atlanta for the summer I began running a bit with mom.  Around 3 miles 3 mornings a week.  Since moving up here, however, I haven’t run outside due to time and unfamiliarity with my surroundings.  Today I found a park and set to it.  I got in 20 minutes before the sky decided it was time to let the thunder and lightening come out and play, and it was the perfect amount of time 😉  PLUS the incoming storm gave off a lovely cool breeze.

Before the run I snacked on a frozen peanut butter chocolate chip larabar.  This is without a doubt my FAV of the 4 new flavors.  My new favorite way to eat a larabar?    …     Frozen.  My goooodness it’s amazing.

A fellow blogger who I thoroughly enjoy reading, Peas and Thankyou, had a recipe in her post today for homemade chocolate chip cookie dough bars that made my eyes turn the size of dinner plates.  Click here and take a look!  I will have to make these and soon!

Dinner was a trip to the whole foods salad bar.  I drop way too much $ at this place.  But it is a haven for single people with no kitchen, so I keep my mouth shut 😉

Mixed greens and spinach with carrots, noodles, chick peas, steamed broccoli, steamed butternut squash, artichokes, olives, and more goodies I can’t even name.

Has anyone ever been disappointed eating at whole foods??

I had never heard of this band before seeing them open at a concert 2 years back.  I immediately fell in love with them upon their first song, which I don’t think I’ve been able to say for many other bands.  The live show they put on is pure crazy spectacular.

Pad See Ew Please

So This morning started off with a long awaited Green Monster!  An Almond Butter, Banana, Pomegranate green monster to be exact.

Last night was amazing, I had some great dances and even did a few moves … IN THE AIR … I will definitely be finding that partner again 😀  Needless to say I slept well afterwards.

I awoke ready to get my green on.

Almond Butter, Banana, Pomegranate Green Monster :
1-2 tbsp chia seeds
lots of cinnamon 😉
2 extra large handfuls of fresh spinach
frozen banana – broken into pieces
1 tbsp almond butter
4-8 ounces pomegranate kefir – depends on desired consistancy
topped with a swirl of almond butter and Udi’s artisan granola

This was like a peanut butter and jelly sandwich in liquid form.  It was a heavenly combination, refreshing, party in my mouth.  I will be making this again soon! 🙂

I came across this band a little over a year ago and fell in love.  They are without a doubt on my list of bands to see live.  This particular song was the one I chose for my reel on my website as well.

At work today I came across a photo link from a performance I did back in February with my college’s swing dance group.  I didn’t even know these existed!

Lunch and dinner were Pad See Ew.  I waitressed at a family owned Thai restaurant for 2 years and got to eat for free while working!  I was spoiled rotten in the category of Thai food.  So I was so excited to go for Thai with the office.  The portions were so big that I easily made dinner out of it.  Two birds with one stone 😉

I asked them to make my tofu ‘soft’ tofu – which means they cook it with the rest of the meal instead of deep frying it first.  I like the tofu better this way, it takes on a bit too much of a spongy texture when fried + is better for you.  Two stones again? 😛  It was just the way thai noodles should be with a good bit of vegetables in the form of broccoli, cabbage, onions, and bean sprouts.

After a 45 min trip to the gym I had an amazing apple.

A very photogenic apple 🙂  Do you find that an apple sliced thin like potato chips is more appetizing then one normally??  I found it to be so.  A thin, crisp burst of apple goodness with every bite.

Still Craving something else I turned to the mini peanut butter and jelly sandwich.

Trader Joe’s organic creamy peanut butter with apricot jelly on small rice crackers.  Why I love small rice crackers? – The serving size is about 35-40 crackers!               .. in love –
